The cuisine of the Canary Islands offers a wide range of dishes and delicacies. Probably the best known is the dish made from small potatoes boiled in their skins with salty crusts, (papas arrugadas), fish, a spicy sauce (mojo picón) and maize combined with fish stock (gofio Amasado) .
Potatoes have traditionally been the basic food in any menu on the island, together with maize, cheese, pork, goat meat and fish.
Typical dishes include starters (entremeses or armaderos), such as fresh white goat's cheese, Canary Island ham, crisp pork crackling , soups and stews, such as “puchero” or “cocido canario”, fish casserole, Mojo sauces and “sancocho canario”, with stockfish and vegetables. |

Fish is one of the specialities of the island together with limpets (lapas) and mussels (mejillones) .
There are different varieties of meat dishes prepared with delicious sauces..
Also typical for the island are its cheeses, especially goat's cheese with an indication of its origin, which enjoys an excellent reputation on the remaining islands of the archipelago. |
